Arbutus honey is a monofloral honey. It is produced from the nectar of the arbutus flower. It differs from other honeys on several levels. It is a quite rare honey in Morocco and it is found particularly in the northern part of the Kingdom.
The honey of arbutus is sought for its bitterness. Its bitter flavor is really surprising, because it is unusual for a honey. For a long time, arbutus honey was not harvested because it was considered unsaleable because it was too bitter. This honey constituted winter reserves to feed the bee colonies. Nowadays, gourmets prefer honeys with a strong taste and many cooks are looking for it. Dark brownish in color, its floral smell specific to the Arbutus plant gives it a unique flavor.
